BIIAB Level 2 Award in Cooking Theory and Practice
Course Summary
This qualification is designed for anyone planning, preparing or cooking meals in a kitchen or catering environment; preferably with some kitchen experience and holding the BIIAB Level 1 Award in Essentials of Catering or other related qualifications, such as basic food hygiene.
This course is a progression from the Level 1 Award in Essentials of Catering and will be most beneficial for people with some kitchen experience or some training in food hygiene. The course will teach candidates the skills necessary to plan, prepare and cook meals in a commercial kitchen or catering environment. It provides candidates with a knowledge about cooking methods for meat and fish, soups, stocks and sauces and a variety of vegetables, food presentation and menu planning.
Candidates who successfully complete this qualification may progress to the BIIAB Level 3 Award in Kitchen Management.
