BIIAB Level 2 Award in Cooking Theory and Practice
This course is a progression from the Level 1 Essentials of Catering Award and will be most beneficial for people with some kitchen experience or some training in food hygiene. The course will teach candidates the skills necessary to plan, prepare and cook meals in a commercial kitchen or catering environment. It provides candidates with a knowledge about cooking methods for meat and fish, soups, stocks and sauces and a variety of vegetables, food presentation and menu planning.
This Award is also on the progression route to the BIIAB Level 3 Award in Kitchen Management. Successful candidates can use this qualification for progression onto the VRQ in Professional Cookery or other catering qualifications.
